The new year is finally here and I have been doing my best to lose some of my baby weight! Resolution season is here and this January, General Mills and Weight Watchers want you to save while you lose. I am kicking off the new year right with healthier choices! I have been eating better, exercising, and cooking healthier dishes for my family several times per day. I found some awesome deals on healthy products at Publix this week. You can download the coupons I used here.

Toasted Coconut flakes yogurt recipe

Ingredients Toasted Coconut Flake & Yogurt Recipe
Yoplait Greek 100 Calorie Yogurt
1 cup Coconut Flakes
1 tsp Coconut Oil
1/2 tsp Pumpkin Spice
Pinch of Salt

1 coconut flakes

Tools & Supplies 
Oven
Parchment Paper
Baking Sheet
Ziplock Bag

Instructions 
1. Preheat oven to 350F. Line a baking sheet with parchment paper. Put the coconut flakes in a ziplock bag.

2. Pour the cinnamon and salt in to the bag and give it a good shake.
3. Pour the coconut oil in the bag. It will mostly likely stick to the top of the bag. Close the bag and warm the coconut oil with your fingers. After the oil is in liquid form, start shaking the bag again to coat all the coconut flakes.
4. Pour the coconut flakes on the parchment lined baking sheet and place in the oven on the center rack.

5. Bake for 3-5 minutes. Watch carefully the entire time to make sure they don’t burn the flakes.
6. Pour over the Yoplait Greek 100 Calorie Yogurt. I used Banana Caramel, but I think this would be great over any flavor Yoplait.

  4. The Salted Caramel Yogurt Dip, the Healthified Broccoli Rabe and Ravioli, and the Philly Cheesesteak Onion Soup all sound and look amazing. I will definitely be cooking up some of these recipes this year.

  6. I would actually try the receipt you made here. I love toasted coconut and Yoplait. I haven’t tried this flavor yet, nor toasted coconut in yogurt. I like both, and they sound and look (great pics) great together.

  13. I love coconut. but never thought about toasting it. Brilliant. Oh, how I miss being able to shop at Publix. We don’t have them in Louisiana. Whenever we go to Florida to visit family, I’ll hit Publix and stock up on great B1G1Free deals.
